Beef with spiced plums

Ingredients

8 Eye rump centre steaks, 25mm thick 150g portions
825 g can plums
0.25 cup sweet chilli sauce
0.25 cup chopped coriander leaves

Method

1 Drain plums, reserve 50ml juice. Cut plums in half and remove stone.
2 Combine juice from plums, chilli sauce and coriander.
3 Place steaks in deep dish. Pour over marinade. Add halved plums.
4 Heat large non stick frying pan over high heat.
5 Drain steaks well from marinade and cook for 3 minutes on each side until well browned. Remove to warm plate and cover loosely with foil.
6 Reduce heat to moderate. Add marinade to pan. Cook for 3-4 minutes until thickened. Return steaks to pan. Toss in sauce and serve immediately.

Tips

1 Serve with steamed green vegetables.
